as you know, we’re wildly obsessed with eggs from the farmer’s market.

as it is, we’re wildly obsessed with eggs, period.  they’re delicious.  they’re so healthy.  and they’re good in so many ways.  deviled eggs.  hardboiled eggs.  a raw egg on steak tartare.  eggs benedict.  egg drop soup.  scrambled eggs.  soft boiled eggs.  two egg yolks added to an ice cream recipe for extra cream.  eggs in salads.  poached eggs.  and now you’ll be thinking of forest gump all day. 

we’re also wildly obsessed with summer squash.  this is nothing i feel the need to explain.  if you aren’t obsessed with summer squash too, i actually feel badly for you.  you should eat more squash.

one of the things we do in the summer, though, is keep a steady stock of what i call ‘farmstand squash.’ this is a pretty simple all-purpose dish… saute some garlic with thinly sliced squash and tomatoes until it’s nice and mushy.  flavor as you wish.  you can go so many ways with this - mexican spicy, lemony, herby, simple and clean.  but it’s worth keeping in the fridge because it goes on everything.  you can throw it on pasta as a sauce, add it to rice, eat it in a crepe or taco, or you can make a veggie crack mcmuffin out of it.

first, fry your egg.

isn’t this such a pretty egg?  it’s a blue-green from the market.

i am really such a fan of these little rings because they make a sandwich-size egg easy as pie.  i’ve also used cookie cutters for this before and fried the egg inside of it.  look! a dino-shaped egg!  just make sure you grease them.

next, toast your english muffin.

even that looks delicious!

now, if you’ve got some farmstand squash in your fridge, throw it in the microwave for a few seconds to get it hot.  in our case, we had some because i’d made it the night before.  i actually need to make more tonight.  i ate the rest in a taco yesterday at lunch!

while the squash warms up, top your english muffin with your egg.

your incredible, edible egg.

i like to top mine with a little pepper.  because everything is better with pepper in my world.  (that’s good, old-fashioned p-e-p! pep you cannot down! greystone pep, greystone pep, the peppiest folks around! —- sorry, i obviously needed to throw a camp song out there.  it’s not a good day until you’ve sung a camp song.)

and then add your squash.
